Use "so" before an adjective or an adverb. Use "such" before a noun phrase.

For example, "We had such a nice day." Here, "such" shows a strong feeling, "a" comes before the singular noun "day", and "nice" describes "day". In Japanese, you can say "とても楽しい一日を過ごした". English chooses "so" or "such" depending on the next word, so "such" is the right word before "a nice day". Compare that with "This tea is so hot." Here, "so" comes before the adjective "hot" and means "very".
